Kale & Wild Rice Bowls with Honey Balsamic Vinaigrette

Hello friends!!!! I came across this recipe from a blogger named Iowa Girl Eats.  This simple, delicious, and healthy recipe is one of my all time favorites now so I wanted to share with all of you! Hope you enjoy!



Ingredients:

Serves 2

1 Cup wild rice blend
2 Cups chicken broth
1 chicken breast cut into bite sized pieces
salt, pepper, and garlic powder
4 Cups kale
1 apple, chopped
2 oz. crumbled goat cheese
1/4 Cup dried cranberries
1/4 Cup sliced almonds

Honey Balsamic Vinaigrette:

1/4 Cup extra virgin olive oil
2 Tablespoons balsamic vinegar
1 Tablespoon honey
1 clove minced garlic
salt and pepper

Directions:

Bring chicken broth to a boil in a pot then add rice, place lid on top, turn heat down to medium-low and simmer until tender, about 35 minutes.  Remove from heat. Let sit for 10 minutes to continue steaming, then fluff and let cool slightly.

Combine ingredients for Honey-Balsamic Vinaigrette in a jar or small bowl then whisk and set aside.

Season chicken with salt, pepper, and garlic or garlic powder then saute over medium-high heat until no longer pink in the center.  Remove to plate and set aside.

Now it’s time to assemble your bowl!  Combine warm rice, chicken, kale, apple, goat cheese, dried cranberries, and sliced almonds.  Drizzle with the delicious vinaigrette and toss together in a large bowl.  

Serve and Enjoy!
